Hit is very important. That said, I am not currently hit capped, but I am very close. I have gear that would cap me out, but I don't think it would be worth the other stat loss.
I don't mean to discount the value of hit, because it is indeed VERY good, but you don't want to give up *too much* for a few hit rating.
For example, I currently have 288 HR and 362 dagger skill in my damage gear. I wear Shoulderpads of the Stranger. I have Bladed Shoulderpads of the Merciless in my bank, and if I gemmed them with 2xGlinting Noble Topaz I would be perfectly on the hit cap, but no matter how I slice it, it's a slight downgrade, because the AP/Crit loss is too large for the hit gains.
I got the Stranger shoulders a while ago when my hit was lower, and at the time, the hit was more valuable, and I didn't wear them, but now that I've gotten my hit much higher in other slots, they are an upgrade.
