I'm not sure how the other classes handle it precisely but it typically works itself out.
I'll give you an example of a BC group list after signups are posted
Teron:

[3]Hunters: [???]

[2]Rogues: Khazal, Aitro

For RoS, I'll probably swap a warlock for another DPS warrior.
For Gurtogg, a couple more healers and a tank in and squishy DPS out.

We have a 100% attendance affliction warlock that gives shadow embrace, and the other one or two slots for warlocks are worked out between themselves.
We also have two extremely high attendance warrior tanks, and then the dps/hybrid/other tank warriors work it out amongst themselves after signups and how many of them we use depends on whether our feral druid is available (Aussies like to sleep sometimes apparently).
It's not a masterfully designed system it's just how things have fallen into place
