Unless there is a Tank ring from M'uru or Kil'jaeden that hasn't been seen then there are indeed no new Tanking Rings in the patch, nor are there any craftable items for Tanks with the exception of the Engineering Helm.
Jewelcrafting offers +3 Stamina and +2 Defense from
[Falling Star] and
[Facet of Eternity] so if you are truly min-maxing you could simply make 20+ of each JC only gem, drop JC'ing and still have "exclusive" gems to put in future gear.
