Additionally, what is to be done when you're being proverbially 'punished' for your choice of class/server 2+ years ago? I've put a lot of time into my character, and even though I wouldn't mind healing or tanking, and know that once I learn the specifics I'd be as good at that as at DPS, I am kind of attached to this guy. I enjoy the class itself, I know how to play it to a high level in both a PvE and PvP situation, yet I feel as if I'm being punished for rolling a relatively unwanted class (beyond mayyybe two per raid nowadays).
I don't mean to say this as a class rant per se, I just wonder what would be the value to me of bothering with a reroll when I'm otherwise very happy with my class, gear, and playstyle, sans being desired by the highest end raiding guilds, and being stuck on a server-type that locks me out of half the available servers.

Weigh your happiness versus your potential happiness. If you're content enough with your situation to muddle though- then just stay put. After all the next expansion will be a virtual reset and maybe someday they'll do PvE->PvP.
If you're not happy with your current situation- maybe the grass really is greener on the other side.
I picked a server back in 02/05 that sucked for me. I picked a new server in 05/05 that was better. My interests outgrew my old server though- what I really wanted simply wasn't going to happen there because the server couldn't support it. So I made the leap 08/07 and rerolled on a new server. I rolled the same two classes (Mage/Priest) I always played on my old server because- like you- I really enjoy them. It was the right decision for me and I really am much happier on my new server in my new guild than I was before. I've got opportunities and options I didn't have before and it made me enjoy the game more.
It kinda sucks that I have 2 70's left rotting on my old serer. Perfectly good ones too. Hundreds of days between them and all my baby alts... but in the last 11 months or so I've rebuilt. I've got more gold than I ever did- better gear. New toys to play with (although I miss some things that I can't get on my new faction). All in all there's nothing to draw me back to my old server. If I could transfer my old characters over tomorrow (which is impossible due to faction change in addition to the server type change) and keep my same guild and server as now- I might- but they'd only be bank alts kept out of a sentimental value- I'd keep playing my new ones.
If you're unhappy, maybe being in a new place will make you happier. Maybe it won't. It does no harm to roll and alt and see if it catches on though. =)
