The leg enchants are BOE, so anyone will benefit.
Right now, for pure stamina increases LW + BS is tops (assuming that Fur Linings stack with the BS gem socket and from a Paladin's POV).
LW offers 90 stamina or 74 stamina more than the enchanting bracer enchant (assuming the Fur Lining does NOT stack with the +16 stam enchant).
BS offers 2 uncolored sockets, which is 60 stamina using WotLK epic gems, 48 stamina using rare gems. It is also flexibility, as these are uncolored gem sockets, you can gem for defense or avoidance, whatever you are lacking if you don't want to stamina stack.
JC offers a so-so trinket, and 3 "master" gems that are +41 stamina, so 33 stamina total gained over using epic gems in the same slots. JC actually looks better for warriors, as their set (T7) is full of red sockets that these 41 stamina gems can fill, leading to a 87 stamina increase over using rare quality purple (str/stam or dodge/stam) gems and still activating the socket bonuses.
Alchemy offers a so-so trinket and Mixology, which increases the effects and duration of flasks and elixirs. It is a 50% effect increase and a 100% duration increase. So your Flask of Stoneblood goes from 650 HP and 2 hours, to 975 HP and 4 hours. You gain 325 HP and save some $$.
Enchanting offers +24 stamina to each ring, for a total of 48 stamina.
Inscription offers +32 dodge rating over the rep based shoulder enhancement.
Mining offers a flat 500 HP bonus. Skinning offers some crit rating (more or less useless from a tank POV).
Tailoring and Engineering don't offer much.
