As a hunter (and now as a priest, for that matter) I found it incredibly valuable to have herbalism as a trade skill; they're definitely one of the more pot-intensive classes in end-game raiding, so being able to farm your own major mana / mageblood / mongoose pots is a huge help. With a bit of time spent farming herbs the costs you mention of using said consumables drops dramatically.
As an aside, for longer fights like Patchwerk it's probably worthwhile dumping a bit of cash into brilliant mana oils rather than lessers, it's a fairly decent boost in regeneration, though possibly not necessary for alliance hunters.
