Sorry for bump of old thread. Noted that OP's guild is still on C'Thun.
We use a similar strategy to the one outlined by the OP. The spread around tactic never worked for us, with spotty mage attendance. We found that eventually an eye beam would go uncontrolled or we'd get overwhelmed by giant claws given our conventional 8 warrior 6-8 rogue raid.
It is quite effective. However, we don't use mages in the centre. We spread them out through the raid ready to smack silence onto the giant eyes.
Assign 4 dps warriors, 2 rogues, and 4 hunters to dispatch the small eyes (you need more than 8 assigned to account for people sucked into the stomach). The rogues can off the close ones, the dps warriors and hunters the further ones. They should return back to the North side asap. Generally your dps warriors will arrive in time to put executes on the giant claws, which is just what you want.
As a note, you need to ensure your healers top up the raid before each rupture, that people don't exit the stomach within 3 seconds of a tentacle spawn, and that your priests keep PW:S up on themselves.
While it's more healing to do, our healers actually found it easier to manage because their groups were in one spot, instead of all over the place.
