Don't confuse the new 5- and 10-man instances with the new 25-man raid instances. There is enough information out about Hellfire Citadel and Coilfang Resevoir to support that observation on the 5-mans although they seem to have no timer. However, Kharazan looks to be a hugely long 10-man level 70 instance with a timer and except for Magtheridon - the new Onyxia - we really don't know how long or complex or difficult the new raid game will be.
My point is simply that your observation may well hold true during the levelling period. But when we hit the level cap and start raiding again we don't know enough about what that will look like to observe that people will want to play dual mains.
Whitestreak's point about losing certain classes is well-made. My only response would be to suggest that that wouldn't necessarily be a bad thing. If people are tired of their warlocks and druids, best let them change during the level grind and find more. Ultimately we'll have to figure out how many mages, warriors, etc. we are going to need to raid. I'd rather do that in a way that lets me choose

Mr. He-always-was-kind-of-a-crappy-warrior-but-we-needed-more-warriors-at-the-time. And if you were a great druid but make a crappy Warrior when you switch mains, well, there is no guarantee of a spot now is there?
