I was worrying about something.

From what i heard, in heroic instances you probably will never be fighting mroe than 2 mobs at once. The rest have to be cced, otherwise the tank/heal simply won't hold the damage input.

This has a serious implication for my playstyle. I am currently 0/30/31 specced and make a point out of aoeing every time there is a pull of 3 mobs or more. It works pretty well in non-heroics. I drink like i'm on crack, but i also output very significant dps and speed the run up considerably.

The question is - will this playstyle die in heroic instances? Am i to prepare myself to a life of single-target damaging?

Yes. Except for specifically aoe pulls.

There are still some AoE-parts in Heroics. The Skeletons in Shadow Lab, the Leper Gnomes in Steamvault etc. Same goes for Karazhan. But going all out with AoE on smaller pulls won't work out really. Heavy Melee Mobs tend to one-shot you. If not, there are plenty of heavy hitting cleaves in every instance that would do the rest.

How much life do these AOE packs have in heroics? Can a priest still solo them with holy nova?

I doubt that you can handle those heroic AoE-parts with Holy Nova alone. The mobs tend do have a lot more hitpoints and deal about double the damage. Since I usually run heroics with a Warlock I'm taking care of snaring the mobs using Nova, Conce of Cold and (imp.) Blizzard while he places a couple of Seeds of Corruption. You really don't want all those mobs to beat on you... ;)

About Mages in 5 mans... IMO our role is defined by the various ways of crowd controlling (Polymorph, Nova, Snare) and our great damage on both single and multiple targets. Also, if played well, a mage almost never takes damage and thus makes the healers' job a lot easier.
