Well thought out posts.. well, questionable OP aside, I'll bite.
Firstly a minor correction, hunters use a rotation, warlocks use a priority system. It makes the class (especially affliction warlocks) all about controlling your responses to spell resists and adjusting your spell priorities as you go. As far as I am aware, as a hunter your rotation is dependant on your autoshot timing and cooldowns, and not the
results of those shots.

You rather answered your own question here. "Grass-is-greener" syndrome aside, people reroll the class they personally enjoy or the class they havn't played before - for whatever aspect of the game they wish to experience. I started with a rogue, moved to a warrior, to a mage, to a priest...shaman...warlock - the list is quite considerable - mainly due to the novelty of
something new. Of course, rerolling on a new server with "new everything" would remove all the existing social links which tie many of us to enjoyable raids; indeed one of the more enjoyable aspects of learning a new boss is doing so with people you actually enjoy gaming alongside. So what are you left with? You just roll the class you think you will enjoy or something you havn't experienced before.
I'm not sure what you want to achieve here, well thought out posts reliant on personal preferences are useful only to the individual writing them.
