I wouldn't go with a 2 Prot setup for 10 mans, that's a wasted slot when you get to a fight that only needs 1 tank.
I did Kara/ZA when they were relevant with a Feral MT and an Arms Warrior OT, and we had absolutely no issues with any of the fights (barring Nightbane, the Arms Warrior went Prot for the first 2 kills, then we figured out a way to do it with the Feral tanking). My point is, DPS Warriors were fine in TBC for OT roles, even though they were widely considered as "broken" pre-2.1 (and they received many buffs even after 2.1, the Expertise changes, Devastate changes etc). Now consider that Warriors are getting Defiance and Shield Slam as baseline abilities, so I'd wager they are going to be incredibly powerful and versatile in DPS/OT roles.
Tanks providing Blood Frenzy? Madness!
I personally love stacked melee groups, so I'd go with something like:
Feral MT
Warrior DPS/OT
Enhancement Shaman
Ret Paladin
Rogue
2 Ranged DPS
Resto Shaman
Holy Paladin
Holy Priest (if no Shadow, else Resto Druid)
Of course, we'd be royally screwed on melee unfriendly fights, but that's half the fun.
