Leatherworking offers more stamina than any other profession. Jewelcrafting is the next highest, although it's only 3 stamina better than many other professions. Leatherworking, Jewelcrafting, and Blacksmithing all provide very flexible bonuses.
Alchemy: 120 stamina from [Flask of Steelskin] or 80 agility from [Flask of the Winds]. You also gain access to [Lifebound Alchemist Stone], which is potentially useful for a new tank.
Blacksmithing: 2 extra sockets for up to 120 extra stamina from [Solid Ocean Sapphire] or 80 agility from [Delicate Inferno Ruby]. One of the better professions as its bonuses are very flexible.

Engineering: Quickflip Deflection Plates - Spell - World of Warcraft boost armor by 1500 for 12 seconds on a 1 minute cooldown
Herbalism: Minor heal and 480 haste for 20 seconds on a 2 minute cooldown.
Inscription: 120 stamina from shoulder enchant.
Jewelcrafting: Up to 123 stamina or 81 agility from Chimera's Eye gems. Another flexible profession.
Leatherworking: 155 stamina. Gives more stamina than other professions and can also be useful for the level 80 resistance enchants.
Mining: 120 stamina.
Skinning: 80 crit.
Tailoring: Swordguard Embroidery - Spell - World of Warcraft chance to proc 1000 AP for 15 seconds.

With that I have an opinion.
You say Leatherworking is the best profession, but I would challenge that.
Stamina gained from Professions:
LW = 155 (195-40)
JC = 123(303 -180{60*3 Stamina})
BS = 120 (60*2 Stamina)
Inc = 120 (shoulder enchant)
(Other professions share the 120 factor, I used scribe as a draw from a hat)
Alone, Leatherworking beats all other professions however, if you combine Blacksmithing and Jewelcrafting you get more stamina than any other combination of Professions.
Blacksmithing gives you 120 stamina OR 202 Stamina when combine with Jewelcrafting. No other profession combination gives this bonus, moreover; a 3rd gem that increases it to 303 Stamina, which you increase 41 stam to a prior +60 stamina gem.
Math I did below to explain the numbers.
LW + BS = 120 + 195 = 315
Explaination:
120 from the two socket bonuses, assuming you place 60*2 Stamina.
195 from the bracer enchant.
JC + BS = 202 + 120 + 41 = 363
Explaination:
202 is from Blacksmithing sockets gemmed with Chimera gems.(101 Stam)
120 are the two gems that WOULD'VE been 101 but, because you have 2 extra sockets, these remain unchanged and stay 60.
41 You change a socket that has a 60 stamina by putting in a 101 and gain +41 stamina.
This totals to 363, that no other profession combination can compete with in Stamina gain.
Essentially I'm factoring that there are 3 gems in Jewelcrafting that would've been changed without Blacksmithing. Because of Blacksmithing only 1 gem is being changed.

I've been debating this to myself for a while and finally want some feedback on it.
