It's pretty simple really. For any item you have with sockets in it, just compare the options you have.
Look at a recent simulationcraft output for your character and find the comparison of stats ("Scale Factors"). Here is an example:

Lets say your normalised "worth" of each stat is:
int = 1
hit = 0.6
mastery = 0.3
That is to say, 1 mastery is only worth 0.3 int.
Item of Awesomeness
1 blue socket
+10 mastery socket bonus
You could either:
a) use 40 int gem (Brilliant).
Total bonuses = 40 int.
Total worth = 40.
OR
b) use 20 int + 20 hit gem (Veiled).
Total bonuses = 20 int, 20 hit, 10 mastery.
Total worth = 20 + (20*0.6) + (10*0.3)
. = 20 + 12 + 3
. = 35
The 40 int gem is the right choice. The same principle applies for all gem choices.
