This would give us a rough estimate of what the trinket's proc would be worth, but not taking into account other outside variables, such as any kind of cast times, haste, spellpower, resilience, resistances or the like.
From there, you can add calculations in for certain spells/variable stats or even other outside variables.

Except you're wrong there too.
In a random sample of 100 spells, you'll probably have 15 Lava Burst (100% crit chance), 77 Lightning Bolts (45% crit chance) and 8 Flame Shocks (40% crit chance). This means that you'll have approx 53 crits (and this is with heavy rounding and a few basic assumptions made).
If you want to calculate the dps of something that is caused by crits, you have to factor spell selection, the differing crit chances of all spells, and most importantly
cast time (ie: haste) if you want to calculate the
damage per second. Doing it your way is like taking a 5 year olds drawing of a house, and using it as a blueprint to build one.
