You seem to be under the impression that stacking Spell Power means removing Holy Light from the spell bar and mindlessly spamming Flash of Light all encounter long. Even with a heavy focus on Spell Power, a Paladin will still want to use Holy Light when the fight calls for more throughput but will resume using Flash once the big-bad-damage period is over. Spell Power + FoL trades a little bit of throughput (most of it through the Holy Light glyph) for a lot more consistency (not having to Plea/Judge/melee).
And the changes to Replenishment and Illumination changed the balance from crit barely being better than MP5 under optimal conditions to being worthless as a regen stat compared to the MP5 alternative. The throughput gained from crit rating has always been minimal at best: odds are you gained about 10% chance to crit with 3.1 gearing from crit rating.
And as far as being able to use "the highest ilvl piece you can get for each slot": there are 3 pieces of 258 gear that are well itemized for Int stacking Holy Paladins: T9 gloves, mail legs from faction champions and the ring. Going down to 245 gear and you get to use the crafted bracers. Outside of that you're stuck with either using 239 Ulduar loot or using badly itemized (SP/Crit/Haste or SP/Crit/MP5) but higher ilvl pieces of gear, that choice then boils down to getting more Int from the higher ilvl pieces at the cost of throughput from the well itemized Haste/MP5 Ulduar pieces.

I dont know what Im talking about lol? When you have a nearly 40k mana pool you dont need to trade crit for mp5. I can sustain a holy light spam for a number of minutes with proper use of cooldowns, consumables, and skilled cast cancelling with high spell haste. If youre stacking sp and raiding with me youre going to get every holy light sniped, and if your main heal is flash of light you are bad. And if youre not using ~20+ ilvl upgrades because you dont like how they are itemized you are missing out on a massive amount of int.
Edit-Just looked at your armory and lol @ a 21k mana pool and barely 600 haste. But nice spell power, your few heals per fight that arent overheal must hit hard and your raid must love the subpar flash of light spam when you could be dropping 25k holy light bombs that splash heal on the raid.
