I think that a mage is always gonna win the "most minimal" UI trophy just by the nature of the design of their function. I'm not denigrating ifurita or his efforts with that (he was one of the few smart enough to incorporate aloft I notice!) just saying that everyone is jumping on the less is more bandwagon and its getting to the point where I wonder if the effects are gonna be detrimental to people not using/incorporating mods because they're "ugly" or whatever.

That's for sure, that's one of the cleanest and best looking UIs I've seen. I've got a fairly stripped down UI on my mage alt, but since I primarily do raid healing on my resto druid, my UI is ten kinds of ugliness. I've been working on an upgraded version, I just need some time to sit down and finalize it all before I post. Definitely some great ideas here.

@nife
Yep, that's OnScreenHealth
Actually, most minimalistic UIs I've seen tend to belong to rogues - they usually have the fewest buttons on their screens and raid frames are optional (I need mine to show who I need to buff or decurse - otherwise I'd probably use XRaidStatus instead). I agree that it would probably be more difficult to be minimal as a healing class, with multiple ranks of heals and all, but I've seen some pretty clean looking ones too. Some keys to having a clean looking UI in my opinion include making sure elements are aligned, sticking to no more than two fonts, and using a consistent texture throughout.

Yeah, I've been messing around with OnScreenHealth for a few days, but its hard to get anything really cool looking and minimal as a raiding paladin. I simply must have grid, good health bars, and other important information in the center of the screen that DPS classes really don't have to worry about. I've got my UI to a point where I'm satisfied, but not truly happy with my UIs like I was when I played my rogue.

I have to say that this more or less echoes my sentiments. I raid as a warrior, and that means my UI needs to be able to handle tanking and DPSing effectively in the same layout. Additionally I help lead my raids, so I need a few general raid status type addons. I've stripped my UI pretty far down, but other than auto-hiding Fubar I just don't know what more I can do to clean it up without sacrificing functionality that I depend on in actual raiding.
On my feral druid on the other hand, I've easily achieved a decent minimalist layout without giving up anything important to play. It just depends on how many buttons and unit frames and debuffs you need to watch. And how much trouble will be caused by missing something coming off cooldown or falling off a mob at an inopportune moment.

Personally, I'm not very fond of the whole minimalistic UI trend. I also generally prefer to have everything that I might use in an instance situation (i.e. everything except portals, mount, pets, and trade skills) on bar, just out of convenience. My current UI isn't exactly ideal (slightly too bottom heavy), but it serves all my needs and my tendency towards a large chat window (half the game is communication, after all). One thing I am particular about is a certain degree of balance and symmetry in my interface, and I do believe I have achieved this aim.
More or less, I've managed to work all my must-haves (And no, I will not drop my Mp3 player addon) into the interface in a relatively organized, albeit large, fashion.

I think it´s still a bit crowded at the bottom, if anyone has any hints, I´d appreciate that. And also I need to hide the "Target too far away"-messages, if I just happen to find the option Used to do that with MoveAnything but I ain´t gonna touch that addon again.

awesome! What you can do to clean it up more is move your fubar to the top and auto-hide it so the bottom UI looks cleaner as well as scale the minimap down a little and remove the gold border so it blends with ElectroFlux mod. GJ!

Sorry, I'm not one to post pre-compiled UIs. I post my screenshots to share ideas, and in this case I can't even call it completely my own. It was based on Rdji's UIs from the WowAce forums and modified. If it helps though, I am using eePanels for the background behind my button bars and minimap. The minimap is Simple Minimap, the HUD is OnScreenHealth, and the buffs (both my own and my target's debuffs) are shown using Buffalo2. The font I am using is Avant Garde.
Thanks for the comments guys!
Here is a screenshot of my UI folder:

I actually have more buttons than meets the eye also. Each of my bars (there are actually 3 put together at the bottom) is double capacity since they all page, so I actually have 58 buttons at my disposal (though for the most part, I have my most frequently use spells hot keyed). Paging bars is a great way to free up screen space if needed in my opinion.

So, I redid the basic layout of the bottom half of my UI to make it less top-heavy, geist'ed quite a few more keys to clear up enough room to shift stuff and drop the chat window. This screenshot shows a lot more elements in play, regardless. The only thing not shown in that pic is Omen, which was broken for about half the run before I messed with it a bit.
Oh yeah, the frame beneath target-of-target is my focus.
Another thing I dislike: background panels. I try to achieve a naturally understood background to the interface by well-defined element placement.

How did you make your FuBar opaque at the edges and middle like in this screenshot?
Is it just the transparency settings or is it some external mod?

I don't believe its fubar doing that. Looks like that person is using eepanels to do that.

It's most likely the (in)famous eePanels gradient in action.
[edit] I need to stop leaving tabbed windows open for extended periods of time without refreshing them.
