#1.) When I enter combat, in the dead middle of my screen right by my characters' head I get some sort of timed status bars... I think I saw someone refer to them as...Quartz..? They actually anoy the hell out of me especially in a raid when they stack like 5-6 bars high with different attacks/casts/ect & I really cant see my toon any longer. LOL I like the tool feature BUT How can I at least MOVE then somewhere else?

This sounds like Chronometer or ClassTimers2. Try the both of the following and see if one (or both!) are installed:
/cd2
/chronometer
From there you should be able to find an option for a configuration gui (menu, waterfall, config, try these options) that will offer a choice to either "lock" (uncheck this) or "show anchor" (check this). At that point the thing should become draggable with your left mouse button and, if not, hold the ALT key while you drag.
Don't forget to lock them when you're happy with the position.

# 2.) I recently Added Closet gnome & Outfitter to my collection of addons. I am Prot spec. warrior and am Tanking 90% of the time BUT I need help speeding up the completion of my Dailies & wanted to Switch into DPS gear quickly & was directed to Outfitter... So I have it enabled on here now & tried to set it up per. each 'outfit' but it seems it doesn't "Save". Shouldn't I be able to switch stances & it automatically switch gear like the riding crop drops off & switches out w/ my combat trinket Or no? Maybe Im just asuming thats how it works. OR do I actually have to click the Outfitter bar to Berserker/Dps...?

You can make macros for ClosetGnome quite easily:
/cast Berserker Stance
/cg wear ZomgDPSOutfit
Where "ZomgDPSOutfit" is the name of your preferred outfit for that stance. I can never remember the stance numbers, but someone here may be kind enough to pm you the parameter syntax to make sure that macro will ONLY work when you're NOT in 'zerker stance.
