Most HKs you get IN AV are worth 1 or 2 honor because there's so many people around you to split the honor with. If you have a mod that tracks your honor, you'll see a split of something like "Today's honor 2300: 300 HK honor, 2000 bonus honor". Winning in any of the BGs is the best way to farm honor. But people don't actually play that way (despite the "honor farm" tag BGs get), they play to have fun rather than win. People wont play defense on a node in AB because it's more fun for them to go and fight. Same in AV, as you note avoiding PvP battles and just doing the PvE objectives is the easiest way to win, but it's pretty dull after a while.

Actually, I'd say that it usually doesn't even reach that level. Most players just attack the red names they see, without regard for strategy. It's not even about fun, it's about that immediate 2 honor they get from killing some nameless Alliance on the road, while we lose objectives and forfeit 140 Honor due to this being repeated over and over.

In short - they don't see the actual overall Honor gains over the immediate.
