Your mining/skinning sets you up perfectly for switching to Jewelcrafting/Leatherworking. JC gives you Dragon's Eye gems which are superior to the epic gems and count for any gem color, allowing 3 to satisfy any meta gem - this is a massive advantage as we no longer are subject to slotting sub-optimal gems. You also have access to the JC trinkets which have slots, unlike other trinkets. [Figurine - Monarch Crab] is a fantastic tanking trinket (note the 1 minute CD on the use).

Leatherworking offers Wrist embossments which are incredibly useful and very cheap to produce, as well as discounted leg armor mat cost for self-only leg armor, making it viable to swap leg armor type on the fly or upgrade a new pair of legs quickly.
