If you're that concerned, you can have some of them switch to 32/39 variants, but IMO that spec is a good bit harder to play well than 17/0/54 or even 0/20/51, and will probably require some gearing up in the weapon department.

You're very much entitled to your opinion. I still think it's better to have two Blood DKs MoB'ing to help the tank out (especially if it's a warrior), and one Frosty to help the Shammy clear those points up for other talents. I would never, ever take 7 EPB DKs on a raid. 3 I could live with, but those 3 points are still useless for 2 of them if it's a regular raid makeup. I think we can agree that their DKs are doing something very, very wrong though.

DW tanking. Stack Expertise to completely push boss parries off the table, or is it viable even with 'normal' expertise (3-6%)? I'd read the DW tanking thread, but it's bloody 100 pages =/
