When looking at Sarth, midway across his "island", due left, across the little lava river, on the little ledge, is the best place to put your void tank. From this position, he will not get hit with the flame wall at all.
To pull we have a hunter md the VW. A warrior runs in taunt range of sarth, taunts, and runs straight back. Once sarth goes a little past pertpindicular to the voidwalker the hunter shoots it. This will position sarth's tail pointing away from the raid.
Once sarth starts heading to the void WAIT until he actually does a melee swing at him before you tell the pet to attack. Pop DE, hit the taunt, and hit suffering. Wait 5 or so seconds then start your health funnel. Your healer will then be able to heal without a problem.
Sometimes Sarth will stop and cast a breath before he is in melee range. DON'T have the pet attack at this time. If you do, there is a good chance he will move off his little ledge and tank from inside the lava. This will allow him to get hit with the flame wall.
Once the healer begins to heal the VW, I usually run over to help dps the first add. I dps as hard as I can until the second drake drops then head back over to channel.
After the second drake is down you really cannot stop channeling at any time. Without a channel up I have seen his HP drop from 60k to 0 in a matter of seconds. Stay out of voids and flame walls and you win.
A good macro for this fight is:
/cast Demonic Empowerment
/cast Health Funnel
This will use his last stand on cooldown.
On gearing:
I am sitting at ~30.5k unbuffed hp. This translates to ~75k void health raid buffed. This is more then enough health. You are even able to scale back a little bit of the "bad" + stam pieces to get a little bit more spell damage. The more spelldamage will make your Health funnel heal for quite a bit more (960 hps vs 1500hps.) and you will be a little bit more productive in the "burn phase" on the first drake.

We went about things a bit differently. I simply put the VW on "passive and "stay" on the corner oopposite sarth, with our ADD warrior tank on the other side of VW (both sides opposite sarth.)
Hunter MD's to warrior, who in turn runs a slight arc to VW... (this ensure sarth will rotate a bit in his pursuit of the warrior. warrior runs to VW, I put on aggressive, and thats that... More than enough time for eveyone still to get into position b/4 first drake lands..
Flame walls and lava dont even bother the VW, so they are an non issue. If he gets pushed back, simply toggle passive/aggressive, and he will move to his original spot.. DONT LET HIM GET KNOCKED BACK TO MANY TIMES IN SUCCESSIOn, and try this, b/c he will run through sarth, casuing him to face the raid.
so if you want to fix the knockback, you must reposition EACH knockback, NOT wait...
I dont even health funnel until the 2nd drake lands.. Even though my DPS is awful in tank form, I can still add a little on the first drake..
