I've done BC 25 mans on another toon but am about to venture to Northrend for the first time. Up until this point I have leveled and played as affliction, but would I be better served switching to destruction for questing and dungeons in WotLK content? Most of my gameplay time would likely be centered around five-man dungeons, and I suspect that most "boss" fights may not last long enough to see affliction outperform the burst potential of destruction.

TBH i don't think you should focus on 5-man dungeons before 80 lvl. I suggest focus on solo questing and try to get to 80 lvl asap.
For leveling i suggest either affliction or FG-spec.
Affliction gives nearly 0 downtime, multipulling, self-healing.
FelGuard spec allows you to solo elite quests. (I used this spec for leveling)
I would not spec destruction with you gear. Destruction is slow during leveling since it burns mana fast. Your gear is not high enough to provide burst.
If you want DPS in 5-man or early raids take FG-spec. When low geared your FelGuard will be doing relatively high % of your dps.
