If I ever decided to just stick to 1-2 classes, I would keybind everything in a heartbeat, but atm I enjoy variety a little too much.

I have a trick that I use that you may find helpful (if you have any desire to start using keybindings, that is).
I try to classify the skills I use and keep them in similar spots. For example, on my priest, I have Mind Flay bound to 1. On my warlock, I bound Drain Soul to 1 also. The spells I use in sequence prior to each, I have bound decending to 1.
Power Word: Shield/Siphon Life = 4
Mind Blast/CoA = 3
Shadow Word: Pain/Corruption = 2
Another example would be cooldown skills. On my mage, I had Arcane Power bound to F2. On my rogue, I have Cold Blood bound to F2.
I think this helps just to think "I should burn my cooldown" and immediately know where it is based on your own system rather than having to think "Now, where did I put that on this character? And what's that skill look like again?"
Hope this helps!
As for my biggest weakness, I'd have to say it's getting caught up in just racking up kills instead of focusing on the objective and working with my team. So often in WSG or AB, I'll find myself burning cooldowns just so I can get to the Berserking buff before everyone else, then I'll set out to find the nearest clothie to see how high I can crit. Meanwhile, we're losing LM and BS to single players...
