The problem with PvP is that each game will be different. You could go along with this whole idea and use rupture, another program to eventually find out who in your group takes most damage, etc, and then combat that with changes in gear, however in the end that will not solve your issue.
I am unsure if you are doing this because you are bored, or are doing it to make your arena team better. But in my eyes, you cannot prepare yourself for something that is unpredictable.

Mm realistically games at higher rating are anything but unpredictable. In my 5v5 the enemy will always burst the same group member depending on makeup of the other team.
If its a 4DPS 1Healer - I know I need to bubble and spam heal my Warrior ASAP, And hopefully my Shaman will be able to lust.
If its a 2 Warrior 3 Healer Team - BOFreedom my Shaman and keep him alive, while trying to lock down one of their healers.
If its a standard 3 DPS 2 Healer - as soon as my rogue unstealths, I need to clean all snares and dots, and keep BoSac up on whichever target is taking secondary damage.
PVP is anything but unpredictable, since there is only a limited subset of answers, and you can ask yourself the same questions, and hopefully come up with the same answers as the opposing team.
Sure some teams try stupid things like bursting me (a Paladin with 300+ resil, Blessed Life and 18k Armor) down, others try stupid things like CCing our Mage (???). But those teams eventually fall to the bottom of ratings anyways, so you don't see them anymore.
