Level 80 heroics aren't all that exciting, but there are a few bosses which surprised me:
Throughout I was using my PvE Survival spec, and a turtle - so minimal self healing. This matters

Equipment was 333ish average early on, 340ish later - fairly easily attainable. Buffs were just my alchemist permanent flask, and whatever random buff food I happened to have left over from cooking practice - usually the +90 crit / +90 stamina stuff. You really want the MD and pet healing glyphs, but I imagine most people have that anyway, since there's not much in the way of interesting alternatives in those places.
Utgarde Keep: Probably the hardest I was succesful at; Keleseth' ice "trap" has a fairly high uptime when you're alone, and the damage adds up, especially if the skeletons bash on you - which they often will, due to healing agro and not being able to MD while trapped. Drop a snake and/or fire trap under you to damage the ice cube, and get your pet to help break you out - if you let it tick off naturally you'll hurt a lot and be very quickly put in a new one

Dalronn does a fair amount of damage to you - even if you get his adds to go straight back to your pet. Probably fairly straightforward with more self-healing, and certainly easier with better equipment -> shorter fight -> less damage to you. Ingvar was uninteresting.
Nexus: Easy. Controlling Telestra's split phase might take a few tries. Note that the individual "parts" of Telestra can be CCd with freezing trap.
Azjol Nerub: Anub'arak's adds and swarm mean you'll be taking a fair bit of damage; as survival I found the lock and load procs from an ice trap dropped in a lull in activity invaluable in getting rid of the poison spitting adds quickly. Otherwise unspectacular. One of the first 80 heroics I tried, and I still managed to get Hadronox to about 25% using the feign death trick before her adds started healing her - so Hardonox Denied is surely obtainable with improved equipment and better execution (eg a freezing trap on the descending tunnel, maybe with a snake trap for additional distraction, will give us a few more seconds).
An'kahet: Probably the easiest of all. The makes-Nadox-immune add can be made to disappear with an appropriately timed feign death, and this doesn't count as a kill, so you can collect that achievement

I discovered that entirely by accident. Even as SV, the damage from Taldarams blood sucking phase is not very threatening. Jedoga's enraged phase was easily healable on my turtle, so there's another achievement to collect. Volazj is, since we're alone, entirely trivial.
Drak'tharon: Easy. Collect Novos' Achievement while you're there; the "downstairs" adds will come to you if you're on the stairs

The damage on you in his boss phase is not entirely trivial, but if you're aware it's coming it shouldn't cause problems, even as SV.
Violet hold: Iffy. Moragg looks impossible; he has a %-based damage attack which he casts often enough that I don't think any amount of self healing will help. Otherwise easy. I haven't actually beaten Xevozz in here yet, but that's only down to me taking him too lightly and trying to ignore his spheres, which really doesn't work, even at 85 life levels

Didn't have time to re-attempt that evening. If you're going for "Defenseless" and get ichoron (and thus need to kill the water blobby things yourself), the fight will take a bit and the next gate may spawn before you're done - still eminently doable though. Neither any of the other mini bosses, nor Cyanigosa, do anything worth mentioning.
Gundrak: Easy. If you're going for the Eck achievement, don't forget he has a very short berserk timer - it took me several of his "vomit" attacks to actually get the debuff, so I minimized my outgoing damage, and he ended up going berserk. Still killed him on my first attempt though.
Halls of Lightning: Another candidate for "easiest". Collect all the achievements while you're here.
Halls of Stone: Incomplete. Krystallus and the Maiden of Grief are easy (stand in evil black stuff and you can grab the Maiden achievement). The spark-thingies in the Tribunal event killed me - a spec with self healing should have no issue with it. The sparks can be outranged, but at that point I was so far behind the spawning adds that I wasn't able to keep them consistently away from Brann and he died. As a result, I had no chance to try Sjonir, but I can't see any serious issues with him (have the pet tanking somewhere where it makes it easy to MD the adds over).
Caverns of Time - Stratholme: Not hard, but I underestimated it the first time and ended up dying three times (!). The spawning zombies can be really annoying (I found a fire trap at my feet very helpful). In the street from the town hall to the end boss there seems to be some spawns which do a %-based attack which can and will kill you (icon looks like blood boil I think). However, either the guys who do this are rare, or making sure you avoid agro is sufficient. Expect to sleep a lot during the Mal'ganis fight. On my second clear I missed completing the timed event by about 2 minutes (was in the middle of the last trash when the timer expired), but since I was doing the "slow and steady" approach that time, I'm certain the timed event is doable.
Occulus, Trial of the Crusade: Neither attempted yet (*grumble* vehicle fights).
Forge of Souls: Only did this on normal, which is fairly easy. The 5 enemy trash pulls with several casters are as annoying as they've always been. I suspect that's also where the real difficulty on heroic will be.
Pit of Saron: Forgemaster and Ick are fairly easy on heroic. The trash pulls up the hill are probably deadly, but we can camouflage past the first, third and fourth pulls, and run+feign past the second. I utterly failed at the tunnel, but that's probably down to me sucking - good pet micromanagement is probably helpful here. At the time, I didn't have the patience to practice it
Halls of Reflection: Not attempted yet due to lack of pre-quest.
I tried some Cataclysm stuff too - on normal difficulty though:
Blackrock Caverns: Rom'ogg and Carsh are easy (I used distracting shot + wait + feign to melt his armour; when trying to do this by moving my pet, I had some unpleasant experiences with the pet seeming to get stuck in the "pit" with Carsh in there too... the fight didn't last long then

). I think Beauty will need a spec with some self healing, but should be easy if you have that (got through a good 75% or so even with SV). Obsidius *may* be possible with enough self healing; his twilight corruption hurts a fair bit. Corla I'm not so sure about; you'll be getting at least one evolve, and possibly two if you're not lucky with fears (?). I didn't pull it off, didn't try much either though. Note that if you don't kill Corla, Raz won't show up to clear one of the bridges full of evolved guys, but the portal near the instance entrance will let you skip straight past them (not sure when it's triggered - I ran right into those bridge guards in an attempt to get Raz to show up, and that may have been why I could take the portal on coming back in). Raz does clean up the trash around Obsidius for you, even when Carla and Beauty are still alive. The two pulls of two unbound elementals each (the meteor guys) can be camouflaged past.
Throne of Tides: The first boss is easy and decent practice for "move dammit" fights - there's no need to take any damage yourself here.
Stonecore: 2nd and 3rd boss are both easy, but that's already been covered by others
