For my own reasons, using the combat and mutilate sheets, I put together two draft BiS lists for me (in the context of my guild), with the following significant caveats:
*
Includes only non-heroic ICC gear (i.e. all we'll have available until arthas is killed). Also does not include ToC 25 Heroic gear (my guild was never able to clear that content, and won't bother trying now; I'm guessing others may be in a similar boat).
* I am a LW/skinner - so some options may be different if you have other professions. Hopefully the gear won't change, just the gemming/enchanting, but I haven't bothered trying to find out.
* I've put the options back at what I think the defaults are, but if not, YMMV when comparing DPS numbers.
* I have it set to AP food for fish feasts, even when ArPen food might be slightly better.
* Obviously, it also does not include the items which are not yet modeled in these sheets (heartpierce and abomination in a bottle, most relevantly).
I am less sure about the Mutilate list than the combat one – mutilate required hefty amounts of regemming between every switch (sometimes for expertise, sometimes hit for crit cap, sometimes haste, sometimes AP), so I may have missed something somewhere. Combat was a little more straightforward (red expertise up to cap, then ArPen; yellow a mix of hit, haste, or AP but could be done last and just by following suggestions).
Anyway, hopefully this might be useful for some others out there. If there are any corrections or improvements I am happy to hear about them.

Note that you are soft crit capping because of the DBW trinket.
However, with a pretty minimal loss of about 16 DPS (~0.1%), you could switch out the chest and leg tier pieces for something almost as good, if tokens or emblems are the limiting factor for you (as I'm guessing they may be for some).

Interestingly, I couldn't find any 2-piece gear set that was as close to the 4-piece set as was possible with combat - the closest I came was maybe 50 or 60 dps difference. Maybe I just missed a combination though - as mentioned above, switching the set pieces around caused substantial gemming changes to be required for each combination tested, and I just gave up on some where the dps difference that needed to be overcome was extremely large (200-300 or more).
