the patch you're referring to didn't change what you think, it merely allowed melee hit to affect taunts, taunt was still 17% cap and still a spell even though its physical spell school.

For things which require a bleeding target, any bleed will work, so in a 25 man there are a lot of bleeds from quite a few different players, so assuming the boss is bleeding 100% of the time is safe.

In fact, heroism/bloodlust gives better OOC proc chance, so it is better to berserk outside heroism/bloodlust.

I usually pop a speed/haste pot during bloodlust as haste stacks well with itself.
